Ireland has long been renowned for incredibly fresh fish, dairy and meat...but not necessarily its cooking. These days, Irish foodways are enjoying a renaissance as a new cadre of chefs reimagine the use of traditional ingredients in vibrant dishes to suit modern palates.

The menu for this online class showcases the best of Frances Wilson’s native cuisine: Honey-glazed Salmon topped with a bright Watercress Salad, served alongside Colcannon, the Irish classic of mashed potatoes with chopped greens. And to finish it all off? Chocolate Guinness Cake, of course.

Chef Frances will provide you with some optional suggested beer pairings before the class, then regale you with Irish culinary lore as you cook along. As we bid each other farewell, you'll sit down for a splendid meal to celebrate St Patrick’s Day in style!
