Ireland has long been renowned for incredibly fresh fish, dairy and meat...but not necessarily its cooking. These days, Irish foodways are enjoying a renaissance as a new cadre of chefs reimagine the use of traditional ingredients in sophisticated dishes to suit the modern palate.
The menu for this hands-on class showcases Frances Wilson’s native cuisine, with bold, fresh flavors. Colcannon, an Irish classic of mashed potatoes with chopped greens, is reimagined as a luxurious velvety soup. And have you heard of dulse? This super healthy seaweed becomes almost bacon-like when sautéed; it will accompany a beautiful main coarse of brined salmon.
You'll sit down with your fellow students to share this splendid meal with beer (of course!) and wine pairings, finishing it all off with Chocolate Guinness Cake. Join us to celebrate St Patrick’s Day in style!
