90 Minutes to dinner: Soup

Soup is comfort. It can be as simple as an immune-boosting broth sipped from a mug, or as extravagant as a cream-based bisque with fancy garnishes for your holiday table. Soups are easily made in batches large or small. They freeze well for future meals, helping you to nourish yourself and your loved ones through the upcoming chilly, dark winter months with greater ease.

Frances will show you the basic building blocks for making delicious, healthy soups. She has included recipes for chicken or vegetable stocks, but store bought broths and stocks (and water!) will work just as well. You can make the Spiced Winter Squash Soup as mild or fiery as you like, enjoying it unadorned or topped with Herbed Yogurt or Crispy Chickpeas. Frances will share lots of other ideas for soup flavors and garnishes.

As we sign off for the evening, you will have a restorative, delicious pot of soup ready to serve, along with the skills to improvise soups from whatever ingredients you have on hand in the future.
