Whether you're craving new inspiration for everyday vegetable dishes or you want to try eating vegan for a few days a week, this class is for you. Frances will show how you to get creative with summer market produce.

Perfectly in-season tomatoes team up with hydrating watermelon for an updated Gazpacho. It makes a colorful, refreshing starter or light main course. Tempered spices and caramelized coconut elevate the Green Bean Salad to new heights, and Turkish-inspired Roasted Eggplant with Peppers and Tarator is dinner party worthy (but easy enough to prepare whenever you feel like it.) 

Opt to cook along with every recipe, or watch any of them as a demonstration, saving your extra ingredients for cooking later in the week. You will finish this class with new vegetable confidence, plus a gorgeous meal (or two) for your table.
