So you’ve mastered some basics of cooking and are ready to practice, refine, and build on those skills? Join Chef Frances Wilson and Civic Kitchen co-founder Jen Nurse for this four-session seasonal course, the sequel to our Learn to Cook* series.

Throughout this 4-week series, you will:

  • Make several shapes of pasta by hand and machine using a variety of flours, along with accompanying sauces.

  • Work extensively with fish and shellfish, along with other ingredients to beautifully enhance them.

  • Learn to make sauces, condiments and pickles that will transform your pantry and refrigerator into treasure troves. You’ll bake homemade flatbreads and crackers to serve with supper or alongside charcuterie and cheese platters.

  • Celebrate! In our finale class, we share the tricks and tips for hosting a successful dinner party. You’ll develop and cook the menu together, then join your fellow classmates at the table, sharing with one another and your invited guests.

This course meets on four Wednesday evenings from late October to mid November. Each session starts with hearty snacks and concludes with a generous meal around the table, served with wines, beers, and non-alcoholic beverages.

*Our Learn to Cook series (or similarly robust cooking experience) is a pre-requisite for this course. If you have not completed Learn to Cook, contact us to discuss your experience level, and we will gladly assist you in enrolling!
