Let's Talk Turkey - both online and in-person demonstration

This year, Frances has all of your turkey questions covered. Think of a certain famous turkey hotline, but with a live person and better turkey! Whether you want to cook a whole turkey for a big crowd or smaller turkey parts for a more intimate gathering, Frances will show you how to make it all delectable.

We will discuss the various types of turkey available at the markets and explore the annual dilemma: brine, marinate, or baste with butter? Frances will show you how to spatchcock a turkey or cut it into breast and legs to cook separately, explaining different methods of cooking the whole bird and the separate parts. Finally, she will demonstrate how to use the drippings in the pan to make superlative gravy!

In this hybrid class, Frances will be demonstrating turkey techniques to a live audience at the Civic Kitchen, as we simultaneously host the demo online on Zoom. You can choose to attend and watch in person and sample the food (click here to register for the in-person session), or register on this page to join us on Zoom from wherever you are. Either way, Frances will answer all of your turkey questions. The class will be recorded, and both in-person and online attendees will be given access to the video.
