Soup is comfort. It can be as light as an immune-boosting broth sipped from a mug, or as extravagant as creamy bisque with fancy garnishes for a holiday celebration. Soups are easily made in batches large or small. They freeze well for future meals, helping you to nurture yourself and loved ones through the seasons with ease.
Frances will show you the basic building blocks for making delicious, healthy soups. She has included recipes for chicken or vegetable stocks, but good quality store bought broths and stocks (or water!) work well, too. You can make Spring Green Minestrone with a variety of fresh seasonal vegetables. Keep it vegetarian, or add some soup-friendly Meatballs, then enjoy it unadorned or topped with Pistachio-Parsley Pesto. Frances will share lots of ideas for other soup flavors and garnishes.
