90 Minutes to Dinner: Fish en Papillote

Don’t be put off by the fancy French name! En Papillote (cooked in a tidy packet of parchment paper) is one of the most foolproof and versatile methods of cooking fish, destined to become a favorite in your repertoire. You can vary the vegetables, the herbs, the seasonings and the fish (or use chicken, tofu or more veggies!)...the world is your oyster! Suited for simple everyday meals or an elegant dinner party, the packets can be made in advance and popped in the oven just in time to eat. I will share two favorite versions with you, Thai Curry-inspired and Japanese-inspired, and talk about many other possible combinations.
I will also demystify working with artichokes. She will show you how to clean them and make a delicious dish of Roasted Artichokes that can stand alone as a main course or be served as a side dish.
