90 Minutes to Dinner: Salade Niçoise

Sometimes the classics are the best. After all, they have stood the test of time for good reason!

Take the Salad Niçoise. It is one of the best combinations of salad ingredients every invented! By late June, the tomatoes and beans will at their best at the market. You can be a traditionalist and serve only raw vegetables, but the salad should contain tomatoes, hard-boiled eggs, Niçoise olives and anchovies or tuna, dressed with olive oil. After that, you can improvise with whatever takes your fancy. We have included options for you to choose and customize your own salad.

I will show you two ways of preparing the tuna—by searing a piece of fresh tuna or making tuna confit—as I guide you through the stages of preparing this Provençal treat.
