Please join me at The Civic Kitchen to make a spring menu I curated featuring the cheeses of our special guests, Tamara Hicks, co-owner of Toluma Farms and Tomales Farmstead Creamery and Nick Campbell, Head Cheesemaker.
You and your classmates will cook a collection of recipes from Tamara’s cookbook, Feasts on the Farm, co-written with Jessica Lynn McCleod. We’ll snack on Sungold Tomatoes and Teleeka Bites and Whipped Garden Herb & Liwa Mousse while we cook.
You’ll learn to make a simple but elegant first course of Asparagus and Teleeka Tart showcasing three different cheeses—Teleeka, Liwa & Atika—nestled in a puff pastry shell.
Chef Frances will teach us how to roast Cornish Games Hens to perfection, to serve alongside a Cheesemakers Proja (Montenegrin style cornbread), one of Nick’s contributions to the book, served with a Little Gem & Watermelon Radish Salad with Koto’l (salty feta-style cheese).
After our time in the kitchen, the class will share an abundant meal of all we have cooked together, paired with wines as well as non-alcoholic beverages. Liwa Basque Cheesecake with Honeyed Nectarines & Nasturtiums will complete our menu with a flourish. Copies of Feasts on the Farm will be available for purchase and signing.
